Welcome to Christmas at Rebeccah May Cakes. I carried home a treasure trove of whole spices from a tiny Asian supermarket the other day, with the sun shining I roasted and ground my secret spice mix until I created jars of perfumed promise… Christmas Cakes at Rebeccah May are now ready to be booked. Fruits have been soaking for weeks in brandy and sherry, and now the baking has started and my kitchen is Autumnal, Wintery and most of all, happy.
I was asked to create a decadent 10 inch round chocolate birthday gateau for a birthday party here in Jersey. A beautiful chocolate truffle cake encircled with a white chocolate collar and decorated with handmade white chocolate ‘roses’, dark chocolate dipped cherries, crystalised rose petals and a dusting of glitter. The cake was a show stopper and was picked up from Longeuville Manor where various guests saw it’s triumphant departure in the arms of a very happy client. Cakes like this are a patisserie dream to work on and the results are always delightful.
What birthday cake do you give a sports mad 10 year old girl for her birthday? Well when you can’t tell which is her favourite sport as all sports are her favourite you go for the Nike Sneakers made completely of icing and a winning swoosh! Milly’s 10th birthday cake is a glittery celebration of sport. With gold accents to represent olympic gold medals she has a winners banner and a Nike Swoosh to set off the perfect trainers.
I loved working on this Christening cake, every time I look at a picture of it I smile. This cake is so pretty with it’s heart of handmade sugar roses and a big icing bow holding them together. A simple colour theme which looks incredible against the white icing which is finished with a pearl sheen. Sometimes small cakes can be lost at an event, however this one would stand out, the oversized roses and large bow giving fantastic visual impact.
I was asked to ‘re-cover’ a tier of a gorgeous rich boozy fruit wedding cake for the Christening of the first born child. I’m always happy to do this, the tradition of holding back a tier rarely happens these days as most brides have sponge cakes not fruit and you can’t keep sponge wedding cakes in quite the same way you can a fruit wedding cake. The brief for this Christening cake was building blocks, pink and glitter and so I set to work creating a very pink and glittery christening cake!
Such a pretty wedding cake with a cascade of handmade sugar roses in lilac and pinks, dusted with pearl dust and finished with cream satin ribbon, this is a very beautiful way to tie in the floral element of a wedding day with your wedding cake. Each tier was a different flavour and it was presented on a stand alone table with baby’s breath around the edge, it looked gorgeous.
