I work with Single Estate Cacao which has been personally chosen with the assistance of the world renowned cacao producers, Barry Callebaut. From velvety rich dark to a mellow milk and a vanilla scented white each chocolate flavour profile is delicious.
With my chocolatier and patisserie training I create a unique signature flavours for fillings few other cake makers are able to offer.
From traditional rich truffle ganaches which have fruit or brandy notes through to other more unique flavours such as infusions of violet, rose, geranium, lime, lavender, rosemary & thyme, cardamom, saffron and champagne to name just a few possible ideas.
